The Dolcetto d'Alba from Cascina Fontana is a gastronomic red, the perfect companion for the table that embodies the convivial spirit of the Piedmontese territory. It reveals an aromatic bouquet of ripe red fruits, violets, and typical almond notes, which are found on the palate with pleasantly bitter sensations. On the palate, it is juicy, with a smooth sip and soft tannins that balance with great freshness. An authentic and territorial wine, ideal for meats and aged cheeses, to be tried with tajarin with ragù or a typical semi-aged toma.

The Dolcetto d’Alba from the artisanal winery Cascina Fontana in Piedmont is a red wine with notable varietal and territorial adherence, ideal to enjoy young paired with platters of cured meats and cheeses from the Piedmont tradition. Dolcetto is a grape variety strongly linked to the Langhe, traditionally considered a daily wine due to its juicy and lively taste, never excessive. Because of the moderate acidity of the grape and, consequently, the wine made from it, Dolcettos should be consumed within a few years of the harvest, while they remain fresh and lively. Not by chance, the name Dolcetto refers precisely to the low acidity of the wine, which allows the "sweet" softness to be enhanced.

Cascina Fontana Dolcetto d’Alba is a 100% Dolcetto from vines over 50 years old, planted in clayey loam soils and cultivated according to the principles of organic farming. At the beginning of September, the bunches are hand-picked and carefully selected, then they are crushed in stainless steel tanks where alcoholic fermentation occurs spontaneously thanks to the presence of indigenous yeasts, accompanied by about a week of skin maceration. The subsequent maturation phase, which lasts for several months, also takes place in steel and the wine is finally bottled without prior clarification or filtration.

To the eye, the Dolcetto d’Alba from Cascina Fontana shows a color between purple and ruby. The aromatic profile evokes perceptions of ripe red fruits and violet that blend with typical hints of bitter almond. Very juicy and smooth is the taste development, characterized by soft tannins and good freshness. In the finish, the fruity and almond sensations perceived on the nose reappear.
