The Sparkling Classic Method ‘La Badessa’ from Cascina La Barbatella is the unexpected bubbly in a land of reds. It is produced with the typical grapes of the finest sparkling wines, grown in the sandy soils of Monferrato. After a first fermentation partly in wood, it rests for over three years on the lees. On the nose, it is rich and complex, with a fruity side, hints of pastry, and a touch of dried fruit. On the palate, it is fresh and tense, with a creamy texture, featuring a dry and well-defined sip and a long persistence, ideal as an aperitif or with a delicate risotto
